Amma: “When growing up in the 1950s, we used to eat this dessert in Mysore at Ananda Bhavan. Our cook who used to work there gave us this recipe. Some people use the same ingredients and make it like a halwa. This dessert which is popular at weddings in India, since it can easily be prepared in large quantities, is called Kashi Halwa.”

Soraekai (Ghia) : 1 large
Khoa : 12 Oz
Saffron : 2-3 pinch
Sugar : 3 cups or to taste
Cashew pieces and raisins : 1/4 cup
Ghee : 2 Tbsp
Directions
- Peel and grate the Soraekai. Then squeeze all the juice from the grated Soraekai
- Lightly fry the cashews in the Ghee till they are golden brown
Mix all the ingredients together till they are evenly combined - Transfer to a lightly greased tray and bake until the top browns nicely. Cool completely before serving
